In je protège, the stem has è. In nous protégeons, the accent is é, and the extra e keeps the soft g before -ons. Préserver keeps its initial é throughout: je préserve, nous préservons.

Le projet du jardin
  1. Lina

Nous protégeons les arbres avec une clôture.

We protect the trees with a fence.

  2. Hugo

Et nous préservons l’espace ouvert au centre.

And we preserve the open space in the middle.

  3. Lina

Oui. On garde aussi les vieux bancs.

Yes. We’re keeping the old benches too.

Both verbs fit a garden. The fence sentence names a protective measure; the open-space sentence names a feature to keep. For food kept for later, conserver les aliments is a useful phrase.
