In short
Remplacer puts someone or something in another’s place: remplacer A par B. Échanger means to swap or exchange: échanger A contre B, or échanger quelque chose avec quelqu’un. In a shop, “Can I exchange this jumper?” is Est-ce que je peux échanger ce pull ?

Name the item before making the request
Find:
Demain, je remplace ma collègue à l’accueil.
Tomorrow, I’m covering for my colleague at reception.
A person can remplacer someone in a role. This sentence describes tomorrow’s cover.
One event can involve both verbs: the shop exchanges your jumper, and the larger one replaces the smaller one in your wardrobe. For a swap between friends, échanger brings out what each person gives and receives. For a colleague’s absence, remplacer brings out whose role you take.
