In short
On a French CV, Formation is the usual heading for education and training. Une formation can be a course or your educational background. L’éducation covers education more broadly and also upbringing: l’éducation reçue dans sa famille.

What is the difference between formation and éducation?
Elle est très instruite et elle s’intéresse à l’histoire.
She is very knowledgeable and is interested in history.
Instruit / instruite concerns learning and knowledge.
Leurs enfants sont bien élevés : ils remercient toujours leurs invités.
Their children are well brought up: they always thank their guests.
Bien élevé / bien élevée concerns upbringing or manners.
Both formation and éducation are feminine. Keep une bonne formation and une bonne éducation as complete phrases. The first usually praises someone’s preparation or training; the second can praise their upbringing. L’éducation nationale belongs to the wider language of schooling.
