In short

When renting in France: send your préavis (notice, usually 1 or 3 months) by registered letter, do the état des lieux de sortie (check-out inspection), get your dépôt de garantie back, and update your address with the post office, the CAF, energy suppliers and the tax office.

Envoyer le préavis au propriétaire en recommandé.Send notice to the landlord by registered letter.
J − 2 mois
Chercher un logement et monter le dossier.Look for a home and prepare the application file.
J − 1 mois
Réserver le camion ou les déménageurs.Book the van or the removal company.
J − 15 jours
Faire suivre son courrier à La Poste.Set up mail forwarding with La Poste.
J − 7 jours
Résilier ou transférer les contrats (électricité, internet).Cancel or transfer contracts (electricity, internet).

In big cities like Paris and Lyon (zones tendues), the notice period for an unfurnished flat is only one month instead of three. The état des lieux compares the flat's condition at arrival and departure; any damage can be deducted from your deposit, so photos help.
